Peanut Butter and Honey Oat Bars

Peanut Butter and Honey Oat Bars

  • 1/2 cup honey
  • 1 tbsp coconut oil
  • 1/3 cup peanut butter
  • 1/2 tsp vanilla extract
  • 1/4 tsp. cinnamon, ground
  • 2 cups oats
  • 1/2 cup chopped honey roasted peanuts

Preheat oven to 300 FLine an 8 x 8 pan with parchment paper, making sure the parchment paper hangs over the sides.In a microwave safe bowl, add honey, coconut oil and peanut butter. Microwave for 30 seconds, stir until mixture gets runny and peanut butter completely melted in. You may have to heat for another 20 seconds or so.

Oatmeal Craisin Cookies

3/4 C. Dry Oats
1/4 tsp. Baking Powder
1/8 tsp. Salt
2 Tbsp. Craisins
2 Tbsp. Brown Sugar
1/2 tsp. Cinnamon
1/2 Tbsp. Chia Seeds
1/2 Tbsp. Flax Seeds
1 Tbsp. Coconut Oil
2 Tbsp. Coconut or Almond Milk

Mix together with hands and form cookies.  Bake 15-20 min. @ 350 degrees.

My post workout shake today:

1/2 cup crushed ice
1/2 banana
3 organic strawberries
1 cup organic spinach
1 tbsp. coconut oil
3/4 cup vanilla soy milk
1 scoop vanilla whey

Blend and enjoy!
